DIY Crafts and Baking!

Notice the change of the background?! I had to change it to something Christmas like because it certainly won't look like that in Florida this Christmas. Which actually makes me a little sad.. Growing up where it pretty much always snowed on Christmas makes me think that's how it should be. I really liked getting all bundled up, possibly ice skating on the lake, and have a white Christmas. Jamie says I'm just used to and like the "traditional" Christmas. I pretty much love everything that is "traditional" so this should be no surprise to anyone! And usually I make it back to Indiana around the holidays- last year being Becky's wedding- it was cold and everything was decorated! But this year I won't make it back :( Anyways, I have been making Christmas cookies!! And I thought I would share one that is AMAZING. If you are going to a cookie exchange make this one:

It's a peppermint chocolate chip cookie: YUM! I would have taken pictures but mine weren't as cute as the ones on the website. I recommend not putting them on the parchment paper to bake. I did one set on and one off.. the ones off were much better. And I found the Andes at the local grocery store. They weren't chips but you can break them in small pieces.

Peppermint Crunch-Milk Chocolate Chip Cookies
2 ½ cups all-purpose flour
¾ tsp. baking soda
1/8 tsp. salt
1 cup unsalted butter, at room temperature
1 cup packed light brown sugar
¾ cup granulated sugar
1 tsp. vanilla extract
2 large eggs, at room temperature
7 ounces milk chocolate chips
7 ounces Andes Peppermint Crunch Chips
In a small bowl, whisk together the flour, baking soda, and salt; set aside.
Using a stand mixer fitted with the paddle attachment (or in a bowl by hand), beat together the butter, brown sugar, granulated sugar, and vanilla on medium speed just until smooth, about 2 minutes.
Beat in the eggs one at a time until thoroughly incorporated, then stir in the flour mixture followed by the chocolate and peppermint chips.
On a lightly floured work surface, divide the dough into quarters. Shape each quarter into a log about 9 inches long. Wrap the logs in plastic wrap and refrigerate until firm, preferably for 24 hours (do this part for real please).
Position racks in the upper and lower thirds of the oven; preheat the oven to 350°F. Line 2 baking sheets with parchment paper or silicone baking mats.
Slice the logs into disks ¾ inch thick and place the disks 3 inches apart on the prepared baking sheets. If the chips crumble out (and they will), simply push them back in, they reshape nicely.
Bake, rotating the baking sheets midway through baking, until the cookies are very lightly browned in the centers, about 10 minutes. If you like soft chocolate chip cookies, as I do, err on the side of underbaking.
Let the cookies cool on the baking sheets until firm enough to handle, then use a spatula to transfer them to a wire rack.

My other new recipe I tried was a crock pot taco chili and low fat. It was GREAT! Everyone really liked it. It was so easy to make. I even used chicken that was on the bone (organic) and the chicken fell right off the bone.

Crock Pot Chicken Taco Chili
Servings:

1 onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 8-oz can tomato sauce
10 oz package frozen corn kernels
2 14.5-oz cans diced tomatoes w/chilies
1 packet taco seasoning
1 tbsp cumin
1 tbsp chili powder
24 0z. (3) boneless skinless chicken breasts
chili peppers, chopped (optional)
chopped fresh cilantro
 
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).

And last but not least I have been crafting!! I wanted to do something with all the pictures from the wedding- which I love at least 30 of them so our new apartment is going to look insane but I think we should enjoy them! At least until we have kids and then I heard we won't have any pictures of ourselves anymore.. So I wanted to make something to put in the middle of all the pictures and frame the pictures around the centerpiece. I found this:

Really cute right? And it was only $16.00 from etsy.com.. but I decided hey I can make that! So I set out to make my own "h". And probably $20-30 later and hours of my time I got this..

I still have to add the ribbon but I think it looks pretty good! Now I have been searching for cheap frames since we have so many pictures. TJMax had frames for $3.50 and I found some $1 ones at the dollar store but I still need more! I'll post everything when we get them hung up.
